St. Patrick's Day is just around the corner--yes, I can't believe it's almost March either.  Food and holidays go hand in hand for me, so I couldn't resist featuring a recipe for this one.  St. Patrick's Day might bring to mind images of corned beef, cabbage, and green beer, but for me, I think potatoes.
