Hobo hash is a family comfort food favorite that we really enjoy. Rich and creamy gravy dripping over savory French toast or buttery biscuits is the perfect comfort food! My favorite way to make it is with country sausage and red peppers just as it is described in the recipe but you can use a different veggie or substitute for a different meat to fit your preference.
