This is my idea of the ultimate coconut pie and is pretty much my dream dessert.  It has a creamy filling that always sets up perfectly, an intense coconut flavor, a flaky crust, and loads of fluffy, sweet whipped cream on top.  I worked on perfecting this recipe for two years because I never found
