Many experienced cooks never learn to make good biscuits. Follow the tips here and chances are you will be making fantastic biscuits. Southern Biscuits Tips: 1. Always use fresh baking powder. If it's over 3 months old don't use it. 2. Be sure oven is completely up to temperature (pre-heated) before starting to cook. 3. Do not handle dough any more than necessary. Do not kneed dough. 4. Thin dough makes thin buiscuits. If you want big, fat buiscuits roll out the dough to at least 1 inch thickness. 5. When cutting biscuits out of the dough, push the cutter straight down and straigh up. Do not push down and twist the cutter (makes lop sided buiscuits).
