If I am making this soup with the intention of freezing it, I leave the cream out and just add some when I reheat the soup. If I am reheating an individual portion, I usually just add a large spoonful of sour cream and stir it in. Feel free to add as much cayenne pepper as you like, particularly if you like it a bit spicier.
