Bangkok Street Eats + Thai Spring Rolls with "No-Peanut" Sauce
Fresh spring rolls packed with fresh herbs and vegetables. The recipe includes variations, one made with a spicy chicken mixture, and the other with a combination of mango, mint, and pickled ginger. Don't skip the creamy almond butter dipping sauce- that's where the concentrated Thai flavors come to play! The chicken mixture is enough to make a ton of spring rolls- so make as few or as many as you'd like, and use the leftovers for salads (or more spring rolls!).
