I love Almond Biscotti because they look fancy but, in fact, are easier to make than most cookies in my opinion.  I feel like with so many other cookies, you have to worry about them spreading, or burning, or being undercooked, or turning into little hockey pucks.  Not to mention it can be so exhausting
