I love pizza. I could seriously eat it every day. For every meal. Luckily, it is one of the most versatile dishes out there - you get to choose a base, choose a cheese, throw on some toppings and viola! A plate of deliciousness. When Lisa's creative juices get flowing, I get spoiled, because flatbreads like this one make their way to my plate. The idea for this pizza came when a friend gave us some of his prized chanterelle mushrooms. They worked pretty well, but were almost a little overwhelming with their rich oily character. Never ones to give up, and pretending that we needed an excuse to eat more pizza, we tried again later in the week opting instead for shiitake mushrooms. They worked wonderfully.
