Healthier stuffed mushrooms
These beauties are stuffed with cottage cheese. Light cottage cheese, in fact. And you know what? You won’t be able to tell the difference between these and the full-fat ricotta version. They taste just as amazing. They’re also stuffed with parmesan cheese and are seasoned with herbs and garlic. Shaved bacon is then lovingly placed atop the cheese stuffing. They’re then roasted to their golden perfection and the bacon becomes crispy. Oh man, I am drooling just thinking about these mushrooms.
