This is hands-down the best lemon meringue pie recipe I have ever used - the results are delicious, and it is nearly foolproof. The sweet, flaky crust complements the smooth, tart, lemony center perfectly. If you wish to make a single pie instead of tartlets, follow the recipe as outlined, but only make enough dough for one 9-inch pie.
