You cannot go wrong with this Beetroot Soup. It is quick and simple to make, but still full of flavour from Beetroots and Jerusalem Artichokes. Root vegetables are in season and my family and I are eating our fair share of them. I’d say we have at least one root vegetable at dinner every night.
