Lets talk Gluten-Free Muffins. Sometimes I like just a basic muffin that I can pair with just about anything. Now, I say "just about" because I don't think muffins pair with Italian or Chinese.  A basic gluten-free muffin recipe is a great thing to have on hand, especially a simple recipe.
