Purple Sweet Potato & Chorizo Frittata  Sometimes the best meals are the ones where you toss it in a skillet and let it do it's thing! This was one simple and flavorful dish that was too good not to share! I used leftover spiralized veggies, but feel free to use whatever you have on hand!
