Cemita
In my daring version of a cemita (my best approximation), it gets a slightly different story but delicious nonetheless. I started by toasting the insides of a seeded brioche bun, slathered a good amount of chipotle mayo on both sides, topped with crispy fried chicken cutlet, hand-pulled Oaxaca cheese (string cheese, on some days), slices of avocado and a mixture of shredded iceberg lettuce, red onions, cilantro and needless to say, a really good appetite for a really good sandwich. Makes 4 hefty sandwiches.
