It seems many countries have their own take on the kofta and so we thought a Mexican version would work a treat. We were right. We've mixed in a healthy spoonful of our Smoked Chilli Paste along with crunchy pine nuts and fresh coriander. We've served it with naan breads to making it a little fusion, but there's no reason why you couldn't wrap it in tortillas and serve with guacamole to keep it straight Mexican!
