I think this can be considered an "aha! moment", creating a Paleo chicken BLT sandwich, using chicken as the bread! It's genius, and tastes amazing. I know I love a great BLT sandwich, but I've never thought of using chicken rather than bread - that certainly takes this down to a low-carb sandwich as well!
