Hot Pockets can be very expensive. There's no reason not to dig in and make them yourself. In addition to the many fillings, we have listed, you can also fill them with any leftovers that you have on hand, such as roast beef. Use your imagination and do something like mix the beef with sauteed bell peppers or giardiniera and a little American cheese. The possibilities are endless. You can make the Hot Pockets in the traditional rectangular shape, in the crescent shape (as shown in the picture) as is traditional for Cornish Pasties, or round. You can lay a soup bowl upside down over the dough and cut circles for the crescent or round shapes. The rule of thumb is that one store-bought pie crust will make four hot pockets, so it is more economical if you make your own pie crust. It's easy! You can also use pizza crust dough, either homemade or from a mix. Remember to fill only the bottom half of the rectangle or crescent. The top will be folded down, then sealed and crimped, then finished with a brushing of egg wash. Have fun, and remember that it's almost impossible to "goof" these up.
