Kale Salad with Pecans, Apples, and Bacon
1-2 Tbsp. olive oil 4 slices turkey bacon ¼ c. apple cider vinegar ¼ c. pure maple syrup ¼ tsp. salt ¼ tsp. freshly ground black pepper 1 bunch kale, stems discarded, washed and chopped 2 apples, sliced into matchsticks ¾ c. pecans, toasted if desired   In a medium skillet, brown 4 slices of
