Longganisa is a Filipino pork sausage that is most frequently served for breakfast (but others have it also for lunch or dinner). There are different varieties of longganisa but my favorite one is "batutay", which is a famous beef sausage from my mother's hometown, Gapan Nueva Ecija, Philippines.
