I have been eating roughly this same meal every St. Paddy's Day for practically my entire life. Now that I do the cooking, I've suggested other possibilities, like Guinness Lamb Stew. But Phil has happy memories of HIS mom's corned beef, so this is THE St. Patrick's Day meal every year. I can't complain: this version is the easiest slow-cooker meal I make.
