I was thrilled when my lovely co-worker, Gia, shared her homemade soup recipe with me.  Converting it to an instant pot dish was a cinch and Gia's Instant Pot Chicken Taco Soup was created!   Gia makes the most wonderful foods ... Italian cookies!  Even on a diet, I just can't get enough of them.  Luckily, she only
