Pasta carbonara is one of my favorite pasta dishes. It is so simple, yet so delicious. One of the issues I have had with many carbonara recipes is they add the eggs to a pan and they get overcooked. Nobody wants scrambled eggs in their carbonara.  With this method, you let the hot pasta cook the egg
