This easy to make salad keeps well in the fridge so prepare it on a Sunday so that you have a healthy option for weekday meals. You can use rice noodles, soba, udon, spaghetti, etc I strongly suggest that you double the dressing recipe because it’s yummy with other salads but then also you can drizzle a bit extra on your noodle salad if you want when you eat it a couple days later.
