Mackerel rillettes Ingredients Liquor: 1 litre water 1 bouquet garni 1 lemon cut in half 1 large carrot, chopped 1 onion, chopped Mackerel: 4 fresh mackerel 100g crème fraîche juice of 1 lemon 1 tsp dijon mustard chives salt and pepper Instructions Boil the liquor ingredients for 20 mins. Leave to cool then pass through
