This is a good way to use up leftover ham from the holidays. As always, I enjoy an over easy or over medium egg so the gooey yolk spills out over the the rest of the ingredients, but feel free to modify with scrambled, hard-boiled or poached. In the photo, I used a single, huge egg laid by one of my hens that just happened to be a double-yolker.
