I can't take credit for this recipe, it started off with my fabulous girlfriend Leann and her sister Loree back in 2001.  I've been making them ever since and tweaking the ingredients along the way.  My friends now call them the 'famous chicken enchiladas' and get mad when I don't invite them over.  (Right Shanna?)
