My mom is an outstanding cook and this recipe is based on a salad she made for us over the holidays.  I love the crunchy romaine and cucumber slices as well as the eyebrow raising heat of pepperoncini.  The salad is topped with an herbed tofu feta that adds a nice bite to the salad
