This Cheesy Beef Casserole recipe started out as Porcupines in a Skillet over at 30 Handmade Days Blog.   I found it while blog stalking, and since I LOVE easy meals, I had to try it.    I changed just a few ingredients and amounts, and it was delicious AND easy.  The perfect weeknight meal!
