The overanalyzer in me often hesitates to write about classic recipes like this. Herb roasted potatoes are just so... simple. Almost absurdly so. That ever-nagging voice in my head inevitably chimes in. "Just... potatoes?" Well, really good potatoes. "Boooooooorrrrrring!"
