Grilled calamari is one of my favorite appetizers.  When cooked correctly, it is a fast and tasty treat.  For this recipe I combined two preparation techniques: ceviche and grilling.  I love ceviche, but don't 100% trust myself to serve raw seafood to friends and family.  Ceviche isn't actually cooking because cooking requires heat.
