Lemon Shortbread Cookies Ingredients 1¾ cups + 1 Tablespoon all purpose flour 2 Tbsp cornstarch ¼ tsp table salt ⅔ cup butter, softened to room temperature ⅓ cup + 1 Tbsp confectioners’ sugar ¼ cup fresh lemon juice (about 3-4 lemons depending on the size) 2 heaping Tbsps lemon zest (about 2 lemons) ½ tsp
