Salade Niçoise
This salad is so Nice! But also so American, thanks to Julia Child, who brought this French Riviera favorite to US shores. This salad is the epitome of French “simple, but elegant” cooking & is filling & flavorful, yet cool & refreshing. Even without the traditional eggs, tuna, or anchovies, it’s a hearty meal disguised as a salad. The seaweed pâté adds a salty, “fishy” flavor, & the rest of the ingredients are standard Niçoise inclusions. Feel free to sub another protein of choice: tempeh, tofu, nuts, seeds, or another veggie pâté. Julia and I strongly urge you to separate each ingredient & arrange them next to each other on the plate. “A bountiful arrangement in bowl or platter is so handsome to behold that I think it a cruel shame to toss everything together into a big mess,” Julia wrote.
