Smoke 'em if you got 'em. Ribs, that is, St. Louis style to be exact. If you don't know, St. Louis is a cut. These are full size pork spareribs that have had the breastbone removed. This makes for a more even cut and therefore a better cooked rack of ribs. Look good, right?  Great
