This recipe makes about 4½ cups which I used to make pumpkin curry twice, each with half the recipe. It is delicious with chicken chopped into one inch chunks that have been cooked for a few minutes with olive oil, salt and pepper. Simply simmer in sauce for 20 minutes after cooking chicken to a light golden brown. Vegetables or a study white fish would be delicious with this curry as well. Be sure to refrigerate it if you don't use it all at once.
