If you have leftover ham, try this Ham and Pineapple Grilled Cheese.  It is a wonderful combination of sweet pineapple with salty ham and gooey cheese. I mix up equal portions of honey with brown mustard and add it to both slices of bread.  I added a slice or two of pineapple; some baked ham
