Pad Thai Zoodles - a quick, simple and healthy lunch or dinner that is on the table in just 20 minutes.  This recipe is a great low-carb version of Pad Thai. I used a combination of zucchini and carrot noodles instead of rice noodles and added bean sprouts, red peppers, egg, green onions, and cilantro. Those
