Slow Cooker Chick Pea and Chicken Curry
As much as I love fresh, seasonal summer cooking I LOVE breaking out the slow cooker as the weather starts to turn just a little towards fall. I do use the slow cooker in the summer, but not nearly as much as when the weather is cooler. Is there anyone that doesn't love coming home to dinner already made?? And, as you know, I like to keep it simple. I seldom saute or brown anything before hand-I like recipes where I can throw it all in and turn it on. My whole family loves Indian food, so I have been experimenting with different recipes to make it "better than takeout"-healthier, cheaper, and fresh ingredients. My 7 year old helped me create this recipe by suggesting spices that she thought might work and helping select what veggies we thought might work best from what we had. If you get kids involved in the cooking and the process, they are excited and more likely to eat it! You can easily make this vegetarian by taking out the chicken and replacing it with other veggies such as cauliflower or brussel sprouts.
