I found myself with a substantial amount of fresh summer tomatoes and decided to make this simple roasted tomato salsa. Unlike pico de gallo, or salsa fresca, where fresh vegetables are simply chopped and combined and left chunky, this salsa roja involves roasting the tomatoes, sautéing the aromatics together, and then processing into a smooth
