Summer cocktails are my favorite kind of cocktails. This one I came up with haphazardly when I couldn't find the vanilla rum I wanted for a different drink and stumbled upon Bacardi Grapefruit. When I arrived home, I saw the recent spring rain made our mint go a bit out of control in the garden.
