As I mentioned, I made Oreo cupcakes for my niece's 7th birthday.  They were specifically requested.  I also happened to have some green mint icing and Andes mints leftover from a class last weekend.  So, I decided to use up the leftovers and decorate half of the cupcakes with mint.
