Coconut shrimp is one of my favorite things in the entire world, EVA. It is so delicious...there's just something about that slightly sweet, coconut-y breading that makes my tummy and taste buds so very, very happy. So I was thinking the other day - why not try to make coconut chicken instead of coconut shrimp?
