Prep these easy breakfast enchiladas the night before then bake in the morning for the perfect breakfast. You can also bake immediately. When serving, we love to have hot sauce available on the side. If you aren’t a pepper fan, change it up with some mushrooms or maybe you don’t like ham? You could always replace ham with turkey, chicken or even tofu!
Ingredients: ham, red bell pepper, green onions, cheddar cheese, flour tortillas, eggs, all purpose flour, salt,
