(1) Pixian Doubanjiang is the authentic way to cook this dish, but you can replace with other brand if you cannot find this one. (2) Do not stir the tofu directly after adding into skillet, in order to keep them from break apart. The tofu will get firmer after boil and you could then gently stir with spatular. (3) The last step of adding cornstarch water will help to thicken the sauce. Skip this step if you like less tense flavor of this dish.
