I'm always looking for new ways to serve up traditional macaroni and cheese, so when I spotted this orzo version, I couldn't wait to try it. It's loaded with creamy cheese, spinach and fire roasted diced tomatoes. I really loved the texture of the orzo in this dish, and my kids were happy to eat
