This is my favorite chocolate glaze. It is full of cocoa flavor and the glaze produces a beautiful mirror-like sheen on the pastry. Be sure to make the glaze in advance since it requires time to rest. This is a nice technique to have for those times when you want to add a little glamour to a cake, torte or entremet.
