A rich, full flavoured chai that's caffeine-free. To make it extra spicy, after it's simmered for 30 minutes, turn off the heat and let it steep for 2 hours. Then re-heat and add the tea. Sometimes I include the nutmeg, but if I'm feeling lazy about the grating, I leave it out. You could also try powdered nutmeg.
