I was in a Mexican mood the other week. First I made the Homemade Enchiladas, and now this Spaghetti Squash Taco Casserole. I have been cooking using spaghetti squash for awhile as a side dish on its own with some seasoning, or as a noodle when I do meatballs, but this was my first
