I came upon Chicken with Mushrooms, Wine and Mozzarella in my ridiculously large collection of recipes-to-try, at the end of a busy day when I had a thawed chicken breast and didn't have any idea what I was going to do with it. Fast and easy, this dish was ready in no time, and we loved it!
