I'm calling this herby, moist poultry recipe "Scarborough Fair Roasted Chicken" because the herbs just happen to be 'parsley, sage, rosemary and thyme'  (if you don't remember the song, then I just look ridiculous here. LOL). I know, this looks like a LOT of herbs, but trust me, they add a wonderful, savory flavor without being overpowering.
