Day after tomorrow is Cinco de Mayo! I thought this would be a fitting time to share my homemade enchilada sauce, which can be used in a variety of recipes. It is not only great for homemade enchiladas but I whipped up this current batch to use while making Mexican Pizza tomorrow for dinner. From my Facebook
